Ingredients:
- 200 g roast beef (preferably organic)
- 4 salad leaves (such as romaine or iceberg)
- 1 bell pepper (red or yellow)
- 1 carrot (julienned)
- 1 cucumber (julienned)
- Rubber bands (if needed)
- 2 tbsp light mayonnaise
- 1 tsp wasabi
- Whole grain bread (for serving)
Instructions:
1. Slice the roast beef into thin pieces.
2. Rinse and dry the salad leaves.
3. Cut the bell pepper into strips and prepare the julienned carrot and cucumber.
4. Place the slices of roast beef on top of the salad leaves.
5. Add the bell pepper and vegetable strips on top.
6. Roll the salad leaves into bundles and secure them with rubber bands if they don’t hold together.
7. Mix the light mayonnaise and wasabi together and spoon a dollop on each bundle.
8. Serve with whole grain bread on the side.
