A delicious potato salad featuring roasted potatoes combined with flavorful roasted garlic mayonnaise. This salad is a perfect side dish or a light main course. Preparation Time: 40 minutes

Ingredients:
- 800 g potatoes
- 3 tbsp olive oil
- Salt and pepper to taste
- 1 dl roasted garlic mayonnaise
- 1 dl fresh herbs (e.g., parsley or chives)
- 1 red onion, finely chopped
- 1 dl cherry tomatoes, halved
Instructions:
1. Peel and dice the potatoes into evenly sized cubes.
2. Boil the potatoes in salted water for about 10 minutes or until just tender. Drain and let cool slightly.
3. Preheat the oven to 200°C (400°F). Spread the potatoes on a baking sheet and drizzle with olive oil, salt, and pepper. Roast in the oven for about 20-25 minutes, until golden brown and crispy.
4. Allow the potatoes to cool slightly. Transfer them to a bowl and add the roasted garlic mayonnaise, red onion, cherry tomatoes, and fresh herbs. Gently mix to combine all the ingredients well.
5. Serve immediately or let it chill in the refrigerator for about 30 minutes before serving.
