Ingredients:
- 1 cup cherry tomatoes
- 1 cup cucumber
- 1 cup bell pepper (e.g., red and yellow)
- 1 cup corn
- 1 cup fresh parsley or basil
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
Instructions:
1. Rinse and quarter the cherry tomatoes.
2. Peel and slice the cucumber.
3. Remove the seeds from the bell pepper and chop it into small cubes.
4. In a large bowl, combine all the chopped ingredients.
5. Add the corn and chopped parsley or basil.
