A delicious and sweet-sour dish that combines apples with the spicy flavors of chicken curry. This dish is perfect to serve with cider. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 500 g chicken fillets
- 2 apples (e.g., Granny Smith)
- 1 onion
- 2 garlic cloves
- 1 tbsp curry powder
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp salt
- 1 tbsp oil
- 400 ml coconut milk
- 1 tbsp lemon juice
- Fresh coriander for garnish
Instructions:
1. Peel and chop the onion and garlic.
2. Peel and dice the apples.
3. Heat oil in a pan over medium heat and add the onion and garlic. Sauté until softened.
4. Add the chicken fillets to the pan and cook until golden brown.
5. Stir in the curry powder, turmeric, cumin, and salt. Mix well.
6. Add the diced apples and coconut milk to the pan. Let it simmer on low heat for about 15 minutes.
7. Finally, add the lemon juice and stir.
8. Garnish with fresh coriander before serving.
