Ingredients:
- 2 tablespoons oil
- 2 onions, diced
- 1 bay leaf
- 2 cloves
- 1 cinnamon stick
- 4 whole black peppercorns
- 3 boneless, skinless chicken breasts
- 2 apples, diced
- 1 cup coconut milk
- Salt to taste
- Pepper to taste
- Fresh cilantro for garnish
Instructions:
1. Heat the oil in a large skillet over medium heat.
2. Add the diced onions and sauté until they are soft and golden brown.
3. Incorporate the bay leaf, cloves, cinnamon stick, and black peppercorns. Sauté for a moment to release their aromas.
4. Add the chicken breasts and cook until they are fully cooked and nicely browned.
5. Mix in the diced apples and continue to sauté for a few minutes.
6. Pour in the coconut milk and stir well. Season with salt and pepper.
7. Allow the curry to simmer on low heat for about 10-15 minutes, until the flavors meld together.
8. Remove the spices (bay leaf, cloves, cinnamon stick) before serving.
9. Serve the curry with rice or naan bread, garnished with fresh cilantro.
