Ingredients:
- 400 g ground chicken- 1 large apple, grated
- 100 g dates, finely chopped
- 1 egg
- 1 dl breadcrumbs
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
- 1 tbsp fresh parsley, chopped
- 1 tbsp oil
Roasted Vegetables:
- 2 carrots, sliced- 1 zucchini, diced
- 1 red onion, cut into wedges
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions:
1. Preheat the oven to 200°C (400°F).2. In a bowl, mix the ground chicken, grated apple, chopped dates, egg, breadcrumbs, salt, black pepper, garlic powder, and parsley until well combined.
3. Shape the mixture into a meatloaf and place it on a baking tray lined with parchment paper.
4. For the roasted vegetables: Toss the carrots, zucchini, and red onion in the oil, salt, and pepper. Spread them around the meatloaf on the tray.
5. Bake the meatloaf and vegetables in the oven for about 30-35 minutes, until the meatloaf is cooked through and the vegetables are tender and slightly golden.
6. Let the meatloaf rest for a few minutes before slicing. Serve with the roasted vegetables.
