Ingredients:
- 500 g porcupine meat
- 2 tbsp salt
- 1 tbsp black pepper
- 2 tbsp olive oil
- 1 dl red wine
- 1 dl cream
- 200 g mushrooms (e.g., button mushrooms)
- Fresh herbs (e.g., thyme and parsley)
- 800 g potatoes
- 50 g butter
- Salt and pepper to taste
Instructions:
1. Prepare the meat: Slice the porcupine meat into thin strips and season with salt and black pepper. Let it marinate for about 20 minutes.
2. Cook the meat: Heat olive oil in a frying pan over medium heat. Add the porcupine meat to the pan and cook for about 3-4 minutes on each side until it is cooked but juicy. Remove from the pan and keep warm.
3. Make the sauce: Add red wine to the pan and simmer until the liquid is reduced by half. Stir in the cream and mushrooms, cooking for a few more minutes until the mushrooms are tender. Season with salt and pepper as needed.
