Ingredients:
- 500 g chicken breast fillets
- 2 dl light beer
- 2 tbsp olive oil
- 1 onion
- 3 cloves garlic
- 2 carrots
- 1 bell pepper
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried rosemary
- 1 tsp thyme
- 2 tbsp fresh parsley (for garnish)
Instructions:
1. Peel and chop the onion, garlic, carrots, and bell pepper.
2. Heat the olive oil in a large skillet over medium heat.
3. Add the chopped vegetables and sauté for about 5 minutes.
4. Slice the chicken breast fillets and add them to the skillet. Cook until the chicken is golden brown.
5. Pour the beer into the skillet and season with salt, black pepper, rosemary, and thyme.
6. Let the stew simmer on low heat for about 20-25 minutes, until the chicken is fully cooked and the sauce has thickened slightly.
7. Serve warm, garnished with fresh parsley.
