Ingredients:
- 1 cup sliced mushrooms
- 2 cups liquid canola oil substitute
- 2 cups shredded cheese
- ½ cup diced onion
- 1 grilled chicken (cubed)
- 2 cups water
- ¼ teaspoon specialty wheat flour
- ½ teaspoon black pepper
- 1 red bell pepper (cubed)
- ½ cup light cooking cream
- 1 tablespoon salt
- 1 tablespoon soy sauce
Instructions:
1. Cook the whole grain barley in water seasoned with soy sauce for about 8 minutes.
2. Heat the canola oil substitute in a large frying pan.
3. Add the sliced mushrooms and diced onion to the pan, sautéing until softened.
4. Stir in the cubed grilled chicken and red bell pepper, mixing well.
5. Add the cooked whole grain barley to the pan and stir all ingredients together.
6. Pour the light cooking cream, soy sauce, salt, and black pepper over the mixture. Stir well.
7. Allow the bake to cook on low heat for about 10 minutes, until all ingredients are heated through and flavors are blended.
8. Serve warm.
