Ingredients:
- 500 g fresh vendace
- 1 dl all-purpose flour
- 1 dl breadcrumbs
- 2 eggs
- salt to taste
- black pepper to taste
- 1 dl milk
- 1 dl rapeseed oil (for frying)
- lemon slices (for serving)
- fresh parsley (for garnish)
Instructions:
1. Rinse the vendace thoroughly in cold water and pat dry with paper towels.
2. Prepare a three-step breading station: mix flour, salt, and black pepper in one bowl, place breadcrumbs in a second bowl, and whisk together eggs and milk in a third bowl.
3. Dip each vendace first in the flour mixture, then in the egg mixture, and finally coat with breadcrumbs until well covered.
4. Heat rapeseed oil in a frying pan over medium heat.
5. Fry the vendace in batches for about 3-4 minutes on each side until golden brown and crispy.
6. Transfer the fried vendace to paper towels to drain excess oil.
7. Serve the vendace with lemon slices and garnish with fresh parsley.
