Crispy fried vendace served with traditional mashed potatoes and a deliciously refreshing sour cream sauce. This dish is perfect for summer days or special occasions. Preparation Time: 30 min

Ingredients:
- 500 g vendace - 1 dl all-purpose flour
- 1 dl milk
- 1 dl breadcrumbs
- 1 tsp salt
- 1/2 tsp black pepper
- 1 dl rapeseed oil for frying
Sour Cream Sauce:
- 2 dl sour cream
- 1 tbsp fresh chives, chopped
- 1 tbsp lemon juice
- Salt and pepper to taste
Mashed Potatoes:
- 800 g potatoes
- 1 dl milk
- 50 g butter
- Salt to taste
Instructions:
1. Boil the peeled potatoes in salted water until tender. Drain and mash them.2. Add milk, butter, and salt to the mashed potatoes. Mix well and keep warm.
3. Rinse the vendace and pat them dry with paper towels. Season with salt and black pepper.
4. Prepare three bowls: place flour in one, milk in another, and breadcrumbs in the last.
5. Dip the vendace first in the flour, then in the milk, and finally coat with breadcrumbs.
6. Heat oil in a frying pan over medium heat. Fry the vendace on both sides until golden and crispy, about 3-4 minutes per side.
7. For the sour cream sauce, mix all the ingredients together in a bowl.
8. Serve the fried vendace hot with mashed potatoes and sour cream sauce.
