Ingredients:
- 1 tablespoon coarse sea salt
- 40 vendace fish
Instructions:
1. Clean the vendace: cut off the heads and remove the entrails.
2. Layer the vendace in a dish with coarse salt, allowing them to brine at room temperature. For small fish, 10 minutes is sufficient.
3. Wipe off the salt crystals from the fish.
4. Place the vendace on the smoking rack.
5. Add alder chips, juniper branches, and sugar cubes to the bottom of the smoker.
6. Position the rack in the middle, close the lid, and smoke the vendace for about 15-20 minutes.
