Ingredients:
- 2 chicken breast fillets
- 1 chopped onion
- 2 chopped carrots
- 1 chopped red bell pepper
- A splash of oil
- Salt to taste
- White pepper to taste
- 1 tablespoon dried herbs (such as thyme or oregano)
- 2 cups chicken broth
Instructions:
1. Heat the oil in a large skillet or pot over medium heat.
2. Add the chopped onion and sauté until soft.
3. Add the chicken breast fillets and cook until golden brown.
4. Stir in the carrots and red bell pepper, and sauté for a few more minutes.
5. Season with salt, white pepper, and dried herbs.
6. Pour in the chicken broth and mix well.
7. Cover and let simmer on low heat for about 20-25 minutes, until the chicken is cooked through and the vegetables are tender.
8. Serve warm with rice or potatoes.
