These nutritious and flavorful vegetable patties are perfect for both everyday meals and more festive occasions.

Ingredients:

- 1 can (400 g) kidney beans
- 1 large carrot, grated
- 1 dl rolled oats
- 1/2 dl onion, chopped
- 2 garlic cloves, crushed
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika powder
- 1/2 tsp oregano
- 2 tbsp olive oil for frying

Instructions:

1. Rinse and drain the kidney beans. Mash the beans with a fork or in a blender.
2. Add the grated carrot, rolled oats, onion, garlic, salt, black pepper, paprika powder, and oregano to the mashed beans. Mix well.
3. Shape the mixture into four patties.
4. Heat the olive oil in a pan over medium heat. Fry the patties for about 4-5 minutes on each side until they are golden brown.
5. Serve warm, for example, with a salad or bread.
