Ingredients:
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/4 red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 teaspoon cumin
- 1/2 teaspoon paprika
- Salt and pepper to taste
- Optional: 1 jalapeño, finely chopped for extra heat
Instructions:
1. In a large bowl, combine the chickpeas, cherry tomatoes, cucumber, red onion, and parsley.
2. In a small bowl, whisk together the olive oil, lemon juice, cumin, paprika, salt, and pepper.
3. Pour the dressing over the salad and toss gently to combine.
4. If using, add the jalapeño for extra spice and mix well.
5. Serve immediately or refrigerate for 30 minutes to let the flavors meld.
