- Alder wood chips for grilling
- Salt
For the Garlic Mustard Mayonnaise:
- 120 g mayonnaise (homemade or Hellmann’s)
- 3 tsp Dijon mustard
- 2 tsp liquid honey
- 2 grated garlic cloves
- 1 tbsp finely chopped shallots
- 1/4 tsp cracked white pepper
- 1 tbsp finely chopped fresh chives
- 1 tbsp fresh dill, finely chopped
- A pinch of fine sea salt

Instructions:

1. Prepare the Eels: Carefully remove the blood from the eels and clean them thoroughly.
2. Fry the Eels: Heat the grill with alder wood chips. Season the eels with salt and grill them until they are beautifully golden brown and cooked through.
