A delicious ground meat soup perfect for winter lunches, inspired by the atmosphere of the Riihivuori ski resort. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 400 g ground beef - 1 large onion, chopped
- 2 carrots, diced
- 2 potatoes, diced
- 1 liter beef broth (or water with beef bouillon)
- 100 g frozen peas
- 2 tablespoons tomato paste
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon dried oregano
- 2 tablespoons oil for frying
- Fresh parsley for garnish
Instructions:
1. Heat the oil in a large pot over medium heat. 2. Add the chopped onion and sauté until soft and translucent.
3. Add the ground beef and brown it well.
4. Add the diced carrots and potatoes to the pot. Sauté for a few minutes.
5. Pour in the beef broth and add the tomato paste, salt, black pepper, and oregano.
6. Bring the soup to a boil, then reduce the heat. Let it simmer for about 20 minutes until the vegetables are tender.
7. Add the peas and cook for an additional 5 minutes.
8. Serve the soup garnished with fresh parsley.
