A tasty and easy ground beef soup that the whole family will enjoy. This soup gets better with reheating, making it a great option for leftovers. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 400 g ground beef - 1 onion
- 2 garlic cloves
- 3 potatoes
- 2 carrots
- 1 bell pepper
- 1 liter beef broth
- 2 dl crushed tomatoes
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions:
1. Peel and chop the onion, garlic, potatoes, carrots, and bell pepper.2. Heat the olive oil in a large pot and add the onion and garlic. Sauté until they are soft.
3. Add the ground beef to the pot and brown it well.
4. Stir in the chopped potatoes, carrots, and bell pepper. Mix well.
5. Pour in the beef broth and crushed tomatoes. Bring to a boil.
6. Reduce the heat and let the soup simmer on low for about 20 minutes, until the vegetables are tender.
7. Season with salt and pepper to taste.
8. Serve hot and garnish with fresh parsley if desired.
