A delicious Russian meatball soup that combines savory ground meat and sauerkraut, creating the perfect warming meal. Preparation Time: 40 minutes

Ingredients:
- 300 g ground beef - 1 tbsp oil
- 2 garlic cloves, minced
- 1 tsp salt
- 1 l beef broth
- 400 g sauerkraut
- 2 potatoes, diced
- 1 carrot, grated
- 1 bay leaf
- Black pepper to taste
Instructions:
1. Heat the oil in a large pot over medium heat. Add the ground beef and cook until browned. 2. Add the minced garlic and sauté for another minute.
3. Stir in the salt, beef broth, sauerkraut, diced potatoes, grated carrot, and bay leaf. Mix well.
4. Allow the soup to simmer on low heat for about 20 minutes, until the potatoes are tender.
5. Season with black pepper to taste and remove the bay leaf before serving.
