Ingredients:
- 300 g ground beef
- 1 onion
- A splash of oil
- 8 dl water
- 1 beef bouillon cube
- 3-5 potatoes (yellow variety)
- 2-3 carrots
- 1 leek
- Salt and pepper to taste
- Fresh basil (optional)
Instructions:
1. Peel and chop the onion, carrots, and potatoes.
2. Heat a splash of oil in a large pot and sauté the onion until it is soft.
3. Add the ground beef and cook until browned.
4. Pour in the water and add the beef bouillon cube, stirring well.
5. Add the potatoes, carrots, and chopped leek. Bring the soup to a boil, then reduce the heat.
6. Let the soup simmer on low heat for about 20 minutes or until the vegetables are tender.
7. Season with salt and pepper to taste.
8. Serve hot and garnish with fresh basil if desired.
