This easy-to-make tortilla recipe is perfect for a quick dinner or lunch. Filled tortillas taste great and can be customized to your liking. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 4 large tortillas
- 400 g chicken breast
- 1 cup corn (canned)
- 1 cup black beans (canned)
- 1 bell pepper (sliced)
- 1 small red onion (chopped)
- 1 cup shredded cheese (e.g., cheddar)
- 2 tablespoons oil
- 1 teaspoon paprika powder
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Fresh cilantro (for garnish, optional)
- Salsa or guacamole (for serving, optional)
Instructions:
1. Heat the oil in a large frying pan over medium heat.
2. Add the chopped red onion and sliced bell pepper, and sauté for about 5 minutes until they soften.
3. Add the chicken pieces to the pan and season with paprika powder, garlic powder, salt, and pepper. Cook until the chicken is done and golden brown.
4. Stir in the corn and black beans, mixing well and heating through for a few more minutes.
5. Remove the pan from heat. Place the tortillas on a plate and evenly distribute the filling in the center of each tortilla.
6. Sprinkle shredded cheese over the filling and roll the tortillas tightly.
7. Serve the tortillas garnished with fresh cilantro, and accompanied by salsa or guacamole if desired.
