Marinated vegetables are a delicious and colorful side dish that surprises with their mild flavor. Enjoy them on their own or add them to a salad or main dish. Preparation Time: 30 minutes + marinating time
Serving Size: 4-6 servings
Ingredients:
- 2 zucchinis - 2 bell peppers (preferably different colors)
- 1 red onion
- 1 cup olive oil
- 2 tablespoons balsamic vinegar
- 2 garlic cloves, crushed
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried oregano
- 1/2 teaspoon chili flakes (optional)
Instructions:
1. Wash and slice the zucchinis, bell peppers, and red onion.2. In a bowl, mix together the olive oil, balsamic vinegar, crushed garlic, salt, black pepper, oregano, and chili flakes.
3. Add the sliced vegetables to the marinade and toss well to coat all the vegetables.
4. Cover the bowl with plastic wrap and let marinate in the refrigerator for at least 1 hour, preferably overnight, to deepen the flavors.
5. Serve the marinated vegetables cold or roasted, for example on the grill or in the oven.
