Ingredients:

- 1/2 watermelon
- 2 tbsp jatá honey
- 100 g baru nuts
- 150 g soft cheese
- 300 g fresh vegetables (e.g., carrots, bell peppers)
- 100 ml tucupi emulsion
- 200 g scallops
- 100 g palmito (heart of palm)
- 1 tsp citronella
- 50 g watercress
- 1 tbsp honey mustard dressing
- 300 g pirarucu fish
- 100 g berries (e.g., blueberries)
- 1 tsp pimenta de cheiro seasoning
- 200 g palmito fettuccine
- 100 g Brazilian cheese
- 500 g ribs
- 200 g canjiquinha (corn porridge)
- 100 g kale
- 200 g aligot mashed potatoes
- 50 g Amazon ants (optional)
- 200 g cinnamon zabaglione ice cream
- 100 ml strawberry syrup

Instructions:

1. Cut the watermelon into cubes and serve with honey and baru nuts.
2. Prepare the fresh vegetables and serve with tucupi emulsion.
3. Sear the scallops and palmito with citronella until cooked through.
4. Prepare the watercress and honey mustard dressing to serve as a side.
5. Grill the pirarucu fish with berries and pimenta de cheiro seasoning.
6. Cook the palmito fettuccine and mix with Brazilian cheese.
7. Grill the ribs and serve with canjiquinha and kale as sides.
8. Serve aligot mashed potatoes with Amazon ants as an optional garnish.
9. Finally, serve cinnamon zabaglione ice cream drizzled with strawberry syrup.
