Quesadilla with La Familian Corn Tortillas

A delicious and easy vegan dish perfect for summer grilling. This recipe combines tasty corn tortillas with smoky beef fillets, filled with cheese and served with delicious chimichurri salsa. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 8 La Familian corn tortillas - 2 fresh beef fillets
- 2 tsp salt
- 1 tsp black pepper
- 1 tbsp oil
- 100 g Gruyere cheese, grated
- 2 dl homemade chimichurri salsa
Instructions:
1. Prepare the chimichurri salsa the day before.2. Bring the beef fillets to room temperature and season both sides with salt and black pepper. Add oil and let sit at room temperature for 1 hour before grilling.
3. Grill the fillets for 1.5 - 2 minutes on each side and let rest for 10 minutes.
4. Grate the Gruyere cheese and set aside.
5. Brush the corn tortillas with oil before grilling.
6. Slice the beef fillets thinly against the grain.
7. Place grated Gruyere cheese and sliced beef on top of the first corn tortilla. Top with another tortilla.
8. Flip and grill or pan-fry for about 20 - 30 seconds on each side. Remove and let cool slightly.
9. Serve with chimichurri salsa and enjoy!
