Ingredients

- 4 dl blackcurrant juice concentrate
- 2 tsp potato puree
- 300 g diced pork
- 0.25 tsp salt
- Cooking oil
- 2 onions
- 3 sprigs of rosemary
- 2 garlic cloves
- 2 dl demi-glace (dark sauce base)
- 300 g diced beef
- 1 tbsp whole black peppercorns
- 2 tsp sugar
- Water

Instructions

1. Heat cooking oil in a large pot over medium heat.
2. Sear the diced pork in batches in the pot until browned. Remove and set aside.
3. Chop the onions and add them to the pot. Sauté until softened.
4. Add the rosemary sprigs, crushed garlic, and diced beef to the pot. Sear for a short time.
5. Pour in the blackcurrant juice concentrate and demi-glace. Stir well.
6. Season the mixture with salt, sugar, and black peppercorns. Add water as needed to cover the ingredients.
7. Allow the stew to simmer on low heat for about 30 minutes, until the meat is tender and the flavors meld together.
8. Serve warm with potatoes or bread.
