Ingredients:
- 200 g Chanterelle mushrooms
- 1 small red onion
- 1 small sprig of rosemary
- Black pepper to taste
- 1 tbsp sour cream
- 1 tsp vinegar
- Salt
Instructions:
1. Clean and chop the chanterelle mushrooms. Boil them for about ten minutes and drain the water.
2. Add salt to the mushrooms and let them sit for a while to absorb the flavor.
3. Squeeze out any excess water from the mushrooms and chop them into small pieces.
4. Finely chop the red onion and rosemary and add them to the mushrooms.
5. Add black pepper, sour cream, and vinegar. Mix all the ingredients well together.
6. Let the salad chill in the refrigerator for about 15 minutes before serving.
Enjoy the mushroom salad alongside Karelian stew and potatoes.
