A delicious beef stew paired with perfectly roasted potatoes, cooked slowly in the oven to enhance the flavors. A perfect meal for the whole family!

Ingredients:

- 800 g beef (e.g., chuck)
- 2 tbsp oil
- 2 onions
- 3 garlic cloves
- 4 dl beef broth
- 2 bay leaves
- 1 tsp thyme
- 1 tsp salt
- 0.5 tsp black pepper
- 600 g potatoes
- 2 tbsp butter
- 1 tsp paprika powder
- Fresh parsley (for garnish)

Instructions:

1. Preheat the oven to 175°C (350°F).
2. Cut the beef into cubes and brown it in oil in a large skillet.
3. Add chopped onions and minced garlic to the skillet, and sauté for a moment.
4. Pour in the beef broth and add bay leaves, thyme, salt, and black pepper. Bring to a boil.
5. Transfer the contents of the skillet to a baking dish and cover it with foil. Bake in the oven for about 1.5 hours.
6. Peel and chop the potatoes. Boil them in salted water for about 10 minutes until slightly tender.
7. Drain the potatoes and mix them with butter and paprika powder.
8. Remove the beef stew from the oven and place the cooked potatoes on top of the stew. Bake uncovered for another 30 minutes, until the potatoes are golden brown.
9. Garnish with fresh parsley before serving.
