Serving Size: 4-6 servings
Ingredients:
- 1 kg potatoes
- 1 dl apple or wine vinegar
- 1 dl vegetable broth
- 1 red onion
- 3 tbsp mustard
- 3 tbsp oil (e.g., canola or olive oil)
- Salt to taste
- Black pepper to taste
- Fresh parsley for garnish
Instructions:
1. Boil the potatoes with their skins in salted water until they are tender but not mushy. Allow to cool.
2. Peel the cooled potatoes and slice them into thin rounds.
3. Finely chop the red onion.
4. In a bowl, mix vinegar, vegetable broth, mustard, and oil. Season with salt and black pepper.
5. Add the sliced potatoes and chopped red onion to the dressing and gently toss to combine.
6. Allow the salad to marinate in the refrigerator for at least 30 minutes before serving.
7. Garnish with fresh parsley before serving.
