A traditional Finnish sour milk bread that is flavorful and perfect for any occasion.
Preparation Time: 3 hours (including rising time)
Serving Size: 8 servings
Ingredients:
- 350 g sour milk
- 150 g active starter
- 100 g malt flour
- 400 g wheat flour
- Approximately 1/3 tsp anise
- Approximately 1/3 tsp fennel
- 1/2 tsp orange peel
- 2 tsp salt
- Butter for greasing the pan
For the Topping:
- 1 espresso or approximately 60 ml strong coffee
- 1.5 tbsp syrup
Instructions:
1. In a large bowl, mix the sour milk, active starter, and flours until well combined.
2. Allow the mixture to rest for about 1 hour.
3. Grind the spices in a mortar and sprinkle them along with the salt over the dough.
4. Fold the dough and let it rest for 30 minutes.
5. Repeat the folding process three times.
6. Cover the dough with a damp cloth and let it rise for about 1 hour.
7. Pre-shape the dough and let it rest for another 30 minutes.
8. Grease a baking pan with butter.
9. Shape the dough and place it in the greased pan seam side down.
10. Cover with a cloth and let it rise in a warm place for about 5 hours.
11. Preheat the oven to 230 °C (450 °F).
12. Make slashes on the surface of the bread before baking.
13. Place the bread in the oven with a dish of water and bake for 20 minutes.
14. Reduce the temperature to 200 °C (390 °F) and bake for an additional 15-20 minutes.
15. Brush the hot bread with the coffee-syrup mixture.
16. Allow the bread to cool on a rack before slicing.
