A classic Nordic baked good that combines tangy and sweet flavors with syrup and buttermilk. This spiced bread is a staple at Christmas tables. Preparation Time: 1 hour (plus rising time)
Serving Size: 1 loaf
Ingredients:
- 2 cups buttermilk
- 1/2 cup syrup
- 1/2 cup sugar
- 1 teaspoon salt
- 1 teaspoon ground ginger
- 1 teaspoon cinnamon
- 1/2 teaspoon cloves
- 1/2 teaspoon cardamom
- 1/2 cup rolled oats
- 1/2 cup rye flour
- 4-5 cups all-purpose flour
- 1 packet dry yeast
Instructions:
1. Warm the buttermilk to body temperature.
2. Add the syrup, sugar, and salt, and mix well.
3. Stir in the spices, rolled oats, and rye flour until smooth.
4. Add the dry yeast and mix.
5. Gradually add all-purpose flour until the dough is soft but not sticky.
6. Knead the dough for about 10 minutes and shape it into a ball.
7. Let the dough rise under a cloth in a warm place for about an hour until doubled in size.
8. Turn the dough onto a floured surface and shape it into a loaf.
9. Place the loaf on a baking sheet lined with parchment paper and let it rise for another 30 minutes.
10. Bake at 350°F (175°C) for about 40-50 minutes until golden brown and cooked through.
11. Allow to cool before slicing.
