A delicious buttermilk bread, perfect for the holiday table with its crisp crust and soft interior.
Preparation Time: 2 hours (including rising)
Serving Size: 4 loaves

Ingredients:

- 1 liter buttermilk
- 50 grams yeast
- 200 ml syrup
- 1 tablespoon salt (slightly less)
- 2 tablespoons orange peel
- ½ tablespoon cumin
- ½ tablespoon anise
- 1200 grams wheat flour
- 1000 grams rye flour
For Brushing:
- 50 ml syrup
- 50 ml water

Instructions:

1. Dissolve the yeast in warm buttermilk.
2. Add syrup, salt, and spices to the mixture.
3. Gradually mix in the flours, about 100 grams at a time.
4. Allow the dough to rise in a warm place for 60 minutes.
5. Shape the dough into 4 round loaves and let them rise under a cloth for at least 30 minutes.
6. Poke holes in the risen loaves with a fork and brush with the syrup-water mixture.
7. Bake at 200°C (392°F) in the middle of the oven for about 40 minutes. Brush with syrup-water during baking and cover the surface with aluminum foil if necessary.
