Ingredients
Base:- 200 g butter or margarine
- 1 ½ dl sugar
- 1 egg
- 4 ½ dl all-purpose flour
Filling:
- 1 dl milk
- 1 egg yolk
- 1 tbsp potato starch
- 2 tbsp sugar
- 2 tsp vanilla sugar
- 100 g butter or margarine
Topping:
- 4 dl powdered sugar
- 3 ½ – 4 tbsp water
- Red food coloring
- Sprinkles
Instructions
1. Whip the butter and sugar until fluffy. Add the egg and mix well. Gradually add the flour, about 1 dl at a time.2. Grease mini muffin tins and shape the dough into even balls, pressing them into the bottom and sides of the molds.
3. Allow the cakes to cool in the molds for a bit, but don’t let them cool too much to prevent the bases from breaking.
4. Prepare the filling: Bring the milk, egg yolk, potato starch, sugar, and vanilla sugar to a boil in a saucepan, stirring constantly. Cool the custard, then add the softened butter.
5. Fill the cooled bases with the vanilla filling. Optionally, add a small spoonful of strawberry jam at the bottom.
6. Mix powdered sugar and water to prepare the topping. Color the mixture pink with food coloring and spread it evenly over the filling.
7. Sprinkle nonpareils on top and store the cakes in the refrigerator. They can also be frozen.
