Delicious small pastries with a sweet filling and fresh rhubarb. Perfect for coffee breaks or dessert!
Preparation Time: 1 hour
Serving Size: 12 pieces

Ingredients:

- 200 g butter
- 2 dl sugar
- 2 dl all-purpose flour
- 1 dl potato flour
- 4 eggs
- 1 tsp baking powder
- 1 tsp vanilla sugar
- 300 g rhubarb, chopped
- 100 g cream cheese
- 1 dl powdered sugar
- 1 tbsp lemon juice

Instructions:

1. Preheat the oven to 175°C (350°F) and grease a muffin pan.
2. Beat the butter and sugar together until the mixture is light and fluffy.
3. Add the eggs one at a time, mixing well after each addition.
4. In a separate bowl, combine the all-purpose flour, potato flour, baking powder, and vanilla sugar. Gradually add the dry mixture to the batter.
5. Gently fold in the chopped rhubarb.
6. Divide the batter among the muffin cups and bake in the oven for about 20-25 minutes, or until the bites are cooked through.
7. Allow to cool completely before frosting.
8. Mix the cream cheese, powdered sugar, and lemon juice until smooth. Spread the frosting over the cooled bites just before serving.
