A delightful dessert combining tart rhubarb and sweet meringue, creating a perfect balance of flavors. This treat is ideal for coffee time and easy to prepare! Preparation Time: 1 hour 15 minutes
Serving Size: 8 servings
Ingredients:
- 200 g butter- 200 g sugar
- 4 eggs
- 200 g all-purpose flour
- 1 tsp baking powder
- 300 g rhubarb, chopped
- 100 g white chocolate, melted
- 50 g almond flour
- 50 g coconut flakes
- Juice and zest of 1 lemon
- 1 tsp vanilla sugar
Instructions:
1. Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit).2. Grease a pie dish and line it with parchment paper.
3. Melt the butter in a saucepan and add the sugar. Stir until the sugar dissolves.
4. Remove the saucepan from heat and add the eggs one at a time, mixing well after each addition.
5. Stir in the all-purpose flour, baking powder, almond flour, coconut flakes, lemon juice and zest, and vanilla sugar. Mix until smooth.
6. Gently fold in the chopped rhubarb and melted white chocolate into the batter.
7. Pour the batter into the prepared pie dish and bake in the oven for about 30-35 minutes, until the top is golden brown.
8. Allow to cool slightly before serving.
