A delicious and refreshing addition to pastries or yogurt, this quick-to-make curd is a perfect spring treat.
Preparation Time: 30 minutes
Serving Size: About 2 dl

Ingredients:

- 1 dl rhubarb cubes
- 1/4 dl water
- 1 1/2 dl jam sugar
- 1 egg
- 25 g butter

Instructions:

1. Place the peeled rhubarb cubes in a thick-bottomed saucepan and add the water.
2. Bring to a boil and cook until the rhubarb softens and breaks down.
3. Remove the saucepan from heat and let the rhubarb puree cool slightly.
4. Stir the jam sugar and egg into the cooled rhubarb puree.
5. Bring the mixture to a boil again, stirring constantly, and cook until it thickens.
6. Remove the saucepan from heat and stir in the butter, one piece at a time.
7. Pour the curd into a clean glass jar and store it in a cool place.
