Lemon Curd

A delicious lemon curd perfect for pastries or as a topping for yogurt and toast. Preparation Time: 15 minutes
Serving Size: Approximately 4 dl
Ingredients:
- Zest of 2 lemons
- 3 eggs
- 2 dl sugar
- Juice of 2 lemons
- 75 g butter
Instructions:
1. In a round-bottomed bowl, whisk the eggs until well beaten.
2. Add the sugar, lemon juice, and room temperature butter in small pieces.
3. Heat the egg mixture over a double boiler, stirring constantly until it thickens, about 10 minutes.
4. Stir in the lemon zest.
5. Pour the lemon curd into a clean jar and let it cool before using.
