These delicious citrus muffins are the perfect blend of sweetness and freshness, ideal for a coffee break or snack. Preparation time is about 30 minutes, and the recipe yields approximately 12 muffins.
Ingredients:
- 2 tsp vanilla sugar
- Coconut flakes (for decoration)
- 3.5 dl all-purpose flour
- 1/4 tsp salt
- 1 egg
- 1-2 tsp cardamom
- 1.5 tsp baking powder
- 100 g butter (melted)
- Zest of 1 orange
- 1.5 dl orange juice
- 1 dl lemon curd or orange marmalade
- 2 dl sugar
Instructions:
1. Preheat the oven to 180°C (350°F).
2. In a bowl, mix the dry ingredients: flour, vanilla sugar, salt, cardamom, and baking powder.
3. In a separate bowl, combine the lemon curd (or orange marmalade), orange zest, orange juice, and melted butter.
4. Add the egg to the wet mixture and mix well.
5. Gently combine the dry and wet ingredients until just mixed.
6. Divide the batter among muffin cups and sprinkle coconut flakes on top.
7. Bake in the oven for about 20-25 minutes or until the muffins are golden brown and have risen nicely.
8. Allow to cool slightly before serving.
