Ingredients:

- 1 large egg
- 1 cup (200g) cane sugar
- 1/2 cup (120ml) plant-based milk (e.g., almond milk)
- 1 cup (240ml) lemon juice
- 2 tablespoons lemon zest
- 1/2 cup (120ml) olive oil
- 1 cup (100g) coconut flour
- 1/2 cup (60g) cornstarch
- 1 cup (120g) all-purpose flour
- 2 teaspoons baking powder

Instructions:

1. In a mixing bowl, whisk the egg and sugar until fluffy.
2. Add the plant-based milk, lemon juice, and olive oil, mixing well.
3. In another bowl, combine the dry ingredients and mix in the lemon zest.
4. Gradually fold the dry ingredients into the wet mixture until just combined.
5. Spoon a few tablespoons of the batter into each baking mold.
6. Bake in a preheated oven at 200°C (392°F) for about 20-25 minutes, or until the top is slightly golden and a toothpick comes out clean.
7. For the frosting, mix lemon juice, powdered sugar, and coconut oil, then spread it over the cooled cake bars.
