Ingredients:
- 500 g chicken breast pieces - 1 tbsp oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 tsp paprika powder
- 1 tsp cayenne pepper
- 1 tsp salt
- 1/2 tsp black pepper
- 400 g crushed tomatoes
- 100 ml chicken broth
- 1/2 cup fresh parsley, chopped
Instructions:
1. Heat the oil in a large skillet over medium heat. 2. Add the chopped onion and sauté until it is soft.
3. Add the crushed garlic and cook for another minute.
4. Add the chicken breast pieces and brown them on all sides.
5. Stir in the diced bell peppers and spices (paprika, cayenne, salt, and black pepper). Mix well.
6. Pour in the crushed tomatoes and chicken broth, stir, and bring to a boil.
7. Reduce the heat and let the stew simmer covered for about 15-20 minutes, until the chicken is cooked through.
8. Sprinkle chopped parsley on top before serving.
