This delicious pasta pesto is quick and easy to prepare, perfect for a weekend dinner or a weeknight meal. Preparation Time: 20 minutes
Serving Size: 4 servings
Ingredients List:
- 300 g pasta (such as penne or spaghetti)
- 100 g fresh basil
- 50 g pine nuts
- 2 garlic cloves
- 100 g Parmesan cheese (grated)
- 150 ml olive oil
- Salt and pepper to taste
- Cherry tomatoes (optional)
Instructions:
1. Cook the pasta in salted water according to the package instructions until al dente. Drain and reserve a little of the cooking water.
2. Meanwhile, prepare the pesto. Place the basil, pine nuts, and peeled garlic cloves in a blender. Blend until finely chopped.
3. Add the grated Parmesan cheese and olive oil to the blender. Continue blending until the pesto is smooth. If needed, add reserved cooking water to achieve the desired consistency. Season with salt and pepper.
4. Toss the cooked pasta with the pesto. Serve immediately with cherry tomatoes on the side, if desired.
