A delicious Italian pasta dish featuring eggplant and a rich tomato sauce.
Preparation Time: 45 minutes
Serving Size: 4 servings

Ingredients:

- 400 g spaghetti
- 2 eggplants
- 400 g canned crushed tomatoes
- 2 garlic cloves
- 100 g ricotta cheese
- 50 g Parmesan cheese
- 4 tbsp olive oil
- Salt to taste
- Black pepper to taste
- Fresh basil for garnish

Instructions:

1. Cook the spaghetti in salted water according to package instructions until al dente.
2. Cut the eggplants into cubes and sprinkle with salt. Let them sit for about 30 minutes, then rinse and dry.
3. Heat olive oil in a pan and add the garlic cloves. Sauté until golden brown.
4. Add the eggplant cubes to the pan and cook until they are soft.
5. Pour in the crushed tomatoes, season with salt and black pepper, and let it simmer for about 10-15 minutes.
6. Mix the cooked spaghetti into the sauce and combine well.
7. Serve the pasta topped with ricotta cheese and grated Parmesan. Garnish with fresh basil.
8. Enjoy warm!
