A delicious Sicilian pasta inspired by Vincenzo Bellini's opera Norma, full of flavors that will take you on a culinary journey to Italy.
Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 300 g pasta (e.g., penne or fusilli)
- 2 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 red bell pepper, diced
- 1 zucchini, sliced
- 200 g cherry tomatoes, halved
- 100 g black olives, sliced
- 1 tbsp fresh basil, chopped
- Salt and pepper to taste
- Parmesan cheese for serving
Instructions:
1. Cook the pasta according to package instructions in salted water until al dente. Drain and reserve some cooking water.
2. Heat olive oil in a large skillet over medium heat. Add onion and garlic, sauté until soft.
3. Add red bell pepper and zucchini, cook for about 5 minutes until vegetables are slightly tender.
4. Stir in cherry tomatoes and black olives. Season with salt and pepper, and cook for a few more minutes.
5. Combine the cooked pasta with the vegetables and mix well. Add a little reserved cooking water if the pasta seems dry.
6. Sprinkle with fresh basil and serve with Parmesan cheese on top.
