Description: A delicious and hearty pasta dish with roasted eggplant, rich tomato sauce, and topped with Parmesan cheese. Preparation Time: 45 minutes
Serving Size: 4 servings
Ingredients:
- 1 large eggplant- 300 g pasta (e.g., penne or spaghetti)
- 2 garlic cloves, minced
- 400 g crushed tomatoes
- 100 g grated Parmesan cheese
- 4 tablespoons olive oil
- Salt and black pepper to taste
- Fresh basil for garnish
Instructions:
1. Preheat the oven to 200°C (400°F).2. Cut the eggplant into cubes and place them in a bowl. Add 2 tablespoons of olive oil, salt, and pepper, and mix well.
3. Spread the eggplant cubes on a baking sheet and roast in the oven for about 25-30 minutes, until soft and golden brown.
4. Cook the pasta according to the package instructions. Drain and reserve a bit of the cooking water.
5. In a pan, heat 2 tablespoons of olive oil and add the minced garlic. Sauté for a few minutes until fragrant.
6. Add the crushed tomatoes to the pan and simmer for about 10 minutes. Season with salt and pepper.
7. Mix the roasted eggplant into the tomato sauce. If needed, add reserved pasta water to achieve the desired consistency.
8. Stir the cooked pasta into the sauce and heat through for a couple of minutes.
9. Serve the pasta topped with grated Parmesan cheese and fresh basil.
