These delicious lemon curd muffins are the perfect blend of sweet and tangy, making them an ideal treat for coffee breaks or as a snack. Preparation time: 30 minutes
Serving size: 12 muffins
Ingredients:
- 2 eggs - 3/4 cup brown sugar
- 75 g butter
- 1 cup lemon curd
- 1/2 cup milk
- 2 1/2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1 tsp vanilla sugar
For the frosting:
- 1 1/2 tbsp lemon curd
- Powdered sugar (to achieve desired consistency)
Instructions:
1. Whisk the eggs and brown sugar together until frothy. 2. In a separate bowl, mix the dry ingredients.
3. Melt the butter, then combine it with the milk and lemon curd.
4. Gradually add the dry mixture to the egg-sugar mixture, alternating with the butter mixture. Stir gently until smooth.
5. Divide the batter into muffin cups and bake at 180°C (350°F) for about 15 minutes. Allow the muffins to cool.
6. Mix lemon curd with powdered sugar until it reaches a suitable consistency for frosting.
