Ingredients:
- 2 lemons, juiced
- Zest of 2 lemons
- 100 g sugar
- 100 g butter
- 3 large eggs
Instructions:
1. Squeeze the juice from the lemons and zest the peel.
2. In a saucepan, combine the lemon juice, lemon zest, sugar, and butter.
3. Heat the mixture over low heat until the butter melts.
4. In a separate bowl, whisk the eggs and then add them to the lemon mixture.
5. Continue heating the mixture over low heat, stirring constantly, until it thickens (about 10-15 minutes).
6. Pour the finished Lemon Curd into a clean container and let it cool to room temperature.
7. Store in the refrigerator and use to enhance your favorite desserts.
