A delicious recipe combining crispy vendace with a flavorful tomato salsa, perfect for summer gatherings or a weeknight dinner. Preparation Time: 30 minutes

Ingredients
- 750 g vendace - 2 tsp salt
SPICE MIX:
- 7 garlic cloves
- 1 dl chopped parsley
- 0.5 dl chopped fresh thyme
- 1 dl olive oil
- Juice of 1 lemon
TOMATO SALSA:
- 4 ripe tomatoes
- 1 red onion
- 1 green chili
- 1 dl fresh cilantro
- Salt and pepper to taste
Instructions
1. Rinse the vendace in cold water and pat dry with paper towels. Season with salt. 2. Prepare the spice mix: crush the garlic cloves and combine with parsley, thyme, olive oil, and lemon juice.
3. Mix the vendace with the spice mix and let marinate for about 10 minutes.
4. Prepare the tomato salsa: dice the tomatoes, finely chop the red onion and green chili. Combine all ingredients in a bowl and season with salt and pepper.
5. Heat a frying pan and cook the vendace for about 3-4 minutes on each side until crispy and golden brown.
6. Serve the vendace with the tomato salsa.
