Ingredients:
- 400 g chicken
- 2 dl rice
- 1 onion
- 2 garlic cloves
- 1 red bell pepper
- 1 yellow bell pepper
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp smoked paprika
- 1 dl chicken or vegetable broth
- 2 tbsp olive oil
- Fresh parsley for garnish
Instructions:
1. Peel and chop the onion and garlic.
2. Heat olive oil in a large skillet over medium heat.
3. Add the onion and garlic to the pan and sauté until soft.
4. Cut the chicken into small pieces and add to the pan. Brown the chicken pieces.
5. Chop the red and yellow bell peppers and add them to the pan. Cook for a few minutes.
6. Add the rice and stir well. Pour in the chicken or vegetable broth.
7. Season with salt, black pepper, and smoked paprika.
8. Cover with a lid and simmer on low heat for about 20 minutes, until the rice is cooked.
9. Garnish with fresh parsley before serving.
