A delicious Christmas chocolate mint mousse cake that combines festive flavors with refreshing mint cocoa. Perfect for your holiday dessert table and can be made ahead and frozen!
Preparation Time: 30 minutes + 4 hours chilling time
Serving Size: 10-12 servings

Ingredients:

- 200 g gluten-free cookies
- 100 g melted butter
- 400 ml heavy cream
- 200 g cream cheese
- 150 g Christmas chocolate
- 100 g mint cocoa powder (e.g., mint hot chocolate mix)
- 100 g sugar
- 3 gelatin sheets
- 100 ml water
- Chocolate shavings for decoration

Instructions:

1. Crush the gluten-free cookies into fine crumbs and mix with the melted butter. Press the mixture firmly into the bottom of a springform pan.
2. Soak the gelatin sheets in cold water for about 5 minutes to soften.
3. Whip the heavy cream until stiff peaks form, then add the cream cheese, sugar, and mint cocoa powder. Mix until smooth.
4. Melt the Christmas chocolate in a double boiler or microwave, and let it cool slightly. Add the melted chocolate to the mousse mixture and mix well.
5. Heat 100 ml of water in a saucepan and add the softened gelatin sheets. Stir until the gelatin is completely dissolved, then mix it into the mousse mixture.
6. Pour the mousse over the cookie base and smooth the top. Chill in the refrigerator for at least 4 hours or overnight until set.
7. Before serving, decorate with chocolate shavings.
