A delicious mint cheesecake with a chocolate cookie crust, perfect for any occasion.
Preparation Time: 30 minutes (plus chilling time)
Serving Size: 8 servings
Ingredients:
- 200 g gluten-free chocolate cookies
- 45 g melted butter
- 250 ml heavy cream
- 300 g cream cheese
- 4 gelatin sheets
- 2.5 tbsp peppermint liqueur
- 1 tsp vanilla sugar
- 100 g white chocolate
- About 50 ml water
- 2 drops green food coloring (optional)
- 50 - 100 g dark chocolate (for decoration)
Instructions:
1. Melt the dark chocolate and spread it into thin sheets on baking paper. Place it in the fridge to set.
2. Prepare the crust: Crush the chocolate cookies and mix in the melted butter.
3. Press the cookie mixture into the bottom of a springform pan and refrigerate to firm up.
4. Soak the gelatin sheets in cold water.
5. Whip the heavy cream until soft peaks form.
6. Blend the softened cream cheese into the whipped cream until smooth.
7. Melt the white chocolate and add it to the mixture along with vanilla sugar and peppermint liqueur.
8. If desired, add green food coloring to achieve your preferred shade.
9. Heat the water until boiling and dissolve the soaked gelatin sheets in it. Gradually add the gelatin mixture to the cheesecake filling.
10. Pour about one-third of the filling onto the cookie crust, place a layer of the set dark chocolate on top, then add half of the remaining filling, another layer of dark chocolate, and finish with the rest of the filling.
11. Refrigerate the cake for several hours, preferably overnight.
12. Decorate as desired before serving.
