A tasty alternative for a light lunch or dinner, these easy-to-make vegetable patties also work great as burger patties. Preparation Time: 30 minutes
Serving Size: 4 patties
Ingredients:
- 1 can (400 g) black beans, rinsed and drained - 1 cup rolled oats
- 1 small red onion, finely chopped
- 2 garlic cloves, crushed
- 1 small carrot, grated
- 1 tablespoon olive oil
- 1 tablespoon soy sauce
- 1 teaspoon paprika powder
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon chili powder (optional)
- Oil for frying
Instructions:
1. Place the black beans in a bowl and lightly mash them with a fork, leaving some chunks. 2. Add the rolled oats, red onion, crushed garlic, grated carrot, olive oil, soy sauce, and spices to the bowl. Mix well until all ingredients are combined.
3. Shape the mixture into four patties.
4. Heat a little oil in a pan over medium heat and fry the patties for about 4-5 minutes on each side until they are golden brown and crispy.
5. Serve the patties warm, for example, with a salad or on bread.
